My very favorite post-yoga snack is a delicious, nutritious acai bowl. If you’ve never had one, it’s like a thick frozen smoothie in a bowl, topped with yummy fresh fruit, crunchy granola, and a swizzle drizzle of honey. The only drawback? These yummy bowls can make a serious dent in your pocketbook – average prices range from $8 to $15 for one bowl! Luckily, it’s easy to make them at home, save some cash, and get it just the way you like it. Read on for how to make your own acai bowl, and taste the rainbow.
Ingredients
- Acai Mix – try Sambazon or Acai Roots (2-3 packets)
Find it in the frozen section of your grocer. I found the Sambazon at Costco!
- Apple Juice, Almond Milk, or Coconut Milk (1/4c. per packet)
I like the tanginess of apple juice – I used this amazing organic honey crisp apple juice from Cadia and it was the. bomb.
- Fruit Toppings
Choose what you like – classic favorites like strawberries, blueberries, and banana are always yummy. Add a tropic twist with fun fruits like kiwi or mango.
- Granola
My personal favorite is Udi’s gluten free classic granola. Beware extra sugary granola as it can overpower the sweetness of the fruit!
- Honey
Keep it simple and local. If you can find raw and organic, even better! I used the organic honey from Costco.
- Assorted Toppings
I like to keep it simple, but if you want even more flavor or nutrition value, add shredded coconut, bee pollen, chia or hemp seeds, or anything else your heart desires!
Instructions
- Prepare Fruit
Chop all of your fruit before getting the frozen acai out of the freezer so that everything is ready to go!
- Gather Additional Toppings
Get your granola, honey, and any other toppings (coconut, goji berries, chia seeds) and set them within easy reach so you can easily add them when your bowl is done.
- Blend Acai Base
Run your acai packets under warm water for about 5 seconds to allow the mix to separate from the packaging. Quickly transfer to blender and add 1/4 cup preferred liquid to the acai base. Apple juice will give you a more tart and tangy bowl, and almond or coconut milk is more creamy and smooth. I like apple juice, but try them both and see what you like!
Blend just until mixed – avoid over blending or your mix will get too warm and runny.
- Assemble Bowl
Pour/scoop the acai smoothie base into your bowl, and top with granola. Arrange fruit in a way that makes you smile, then drizzle honey and add any other toppings you like!
- Taste the Rainbow
Forget skittles – this is the best rainbow you’ll ever taste! Grab a spoon and enjoy every bite. Tastes like summer all year round. #nomnomnom
